Utilizing 100% domestic Japanese wheat flour, these craftsmen make a high-hydration dough (60% water!) which is rested for over 43 hours so that the flour can absorb all of that moisture. The dough is then dried for a day, before being hand-stretched and cut.

Put the noodles in a pot of boiling water, when they freely float around the top–after about 3.5 minutes–they should be cooked.
