Yamakawa Jozu is a Japanese shoyu soy sauce brewery that was founded in 1943, when a local liquor store owner decided to make a contribution to alleviating the food shortages caused by war. Ever since then, Yamakawa has been dedicated to making authentic tamari soy sauce via traditional methods, aged in wooden barrels, carefully and with extreme attention to detail.

The tamari soy sauce, seasonings, tamari lees, sauces, and other delicious products produced by Yamakawa have unique aromas and flavors that cannot be replicated outside of their brewery. Their products are inspired by nature, and their goal is to use natural ingredients to allow natural, authentic flavors to shine.

Try unique and delicious products such as barrel brewed tamari, garlic soy sauce, sweet and salty honey shoyu spread, delicious umami barbecue sauce, and much more!

Yamakawa Jozo preserves the rare tradition of brewing tamari soy sauce naturally in wooden barrels, a process that promotes the fermentation and maturation of soybeans through the collaboration of craftsmen and the power of microorganisms. Only 1% of soy sauce in Japan is still produced this way.

Experience the rare, rich, unadulterated flavor of barrel-brewed tamari made with natural water from Gifu's famous Nagara River, slowly fermented over two years to create a rich and delicious flavor.
